Sake is the famous rice wine of Japan, made from the fermentation of Sakamai rice, pure water, and Koji [a fermentation activator]. While produced for nearly 2,000 years and known to the East for centuries, sake is a relatively new export to the western world, and its differences and intricacies are just now starting to be explored. While sake may be served warm [or even hot] or cold, all premium sake should be served chilled, a state allows its delicate floral and fruit flavors to be best appreciated.

The sakes chosen to match the adventurous menu at Fish were selected for their quality, diversity, and distinct flavor. The highest available grades of sake are available in various bottle sizes for parties of differing sizes and appetites.
